Some recipes are just made to be shared. This grilled cheese sandwich is one of them.
I first made this last Christmas and honestly didn’t expect it to be the hit of the table – but here we are. Everyone kept asking for seconds, and my family and friends haven’t stopped talking about it since. It’s one of those recipes that looks simple but tastes like you really know what you’re doing in the kitchen. It became the most talked about thing that day, which says a lot considering there was a full Christmas spread.
The secret? Two cheeses. Sharp cheddar gives you that bold, classic grilled cheese sandwich flavor while mozzarella adds the most satisfying cheese pull you’ve ever seen. Together on sour dough bread, with butter crisped to a perfect golden crust – it’s comfort food at its absolute best.
And if you pair it with a bowl of creamy tomato soup? Honestly, nothing better.
How To Make It

Ingredients
- 4 slices sourdough bread
- 2 slices sharp cheddar cheese
- 2 slices mozzarella cheese
- Butter (softened, for spreading)
Note: Don’t have cheddar or mozzarella? This recipe works with any two melting cheeses you have on hand – gruyère and fontina, provolone and gouda, or even just double cheddar. Use what you love.
Steps
1
Take all 4 slices of sourdough bread and spread softened butter evenly on both sides of each slice. Don’t be shy with the butter – this is what gives you that golden, crispy crust. Make sure you go all the way to the edges.
2
On one slice of bread, layer a slice of cheddar cheese followed by a slice of mozzarella cheese. Place the second slice of bread on top. Repeat for the second sandwich.
3
Heat a pan over low heat – this is important, don’t rush it. Place your sandwich on the pan and let it toast slowly until the bottom is a deep golden brown, about 3-4 minutes. Flip carefully and repeat on the other side. The cheese should be fully melted and gooey by the time both sides are golden.

Grilled cheese is best eaten hot, right off the pan. Serve on its own or alongside a bowl of creamy tomato soup for the ultimate comfort meal.
Tips For The Perfect Grilled Cheese Sandwich
- Use softened butter, not melted. Melted butter can make the bread soggy before it crisps. Softened butter spreads evenly and gives you a more uniform golden crust.
- Low heat is non-negotiable. High heat will burn your bread before your cheese melts. Low and slow every time.
- Cover the pan with a lid for the first minute or two — this traps heat and helps the cheese melt faster without overcooking the bread.
- Let the cheese come to room temperature before assembling if you have time. Cold cheese straight from the fridge takes longer to melt.
What To Serve It With
This grilled cheese sandwich was made to be dunked. A bowl of creamy tomato soup is the classic pairing and honestly the best one – the acidity of the tomato cuts the richness of the cheese perfectly.
Other great pairings:
- A simple green salad
- Roasted tomato bisque
- A cup of hot tea on a cozy afternoon
- A bowl of berries
Make It Your Own
One of the best things about this recipe is how flexible it is. Once you have the technique down, you can switch up the cheeses and make it your own every time. Some combinations worth trying:
- Gruyère + mozzarella — nutty, gooey, very elevated
- Pepper jack + cheddar — if you like a little heat
- Brie + gouda — for a fancy date night version
Frequently Asked Questions
Can I use regular sandwich bread instead of sourdough?
Yes! Sourdough is my personal favorite for this recipe because of how it crisps up, but any sturdy bread works well. Avoid very thin sandwich bread as it can get soggy.
What’s the best pan to use?
A cast iron skillet gives you the most even, golden crust. A regular non-stick pan works great too — just avoid anything too thin that heats unevenly.
Can I make this ahead of time?
Grilled cheese is always best fresh off the pan. That said, you can assemble the sandwiches ahead of time and keep them in the fridge until you’re ready to cook.
Some recipes just stick. This two-cheese grilled cheese has been on repeat in my kitchen since Christmas and I don’t see that changing anytime soon! It’s simple, it’s quick, and it delivers every single time.
Try it this weekend with a bowl of creamy tomato soup and thank me later!
